Golden Oyster Mushroom Pasta

Ingredients
- 250g fresh Mushie Golden Oyster mushrooms
- 300g linguine or spaghetti
- 4 cloves garlic, thinly sliced
- ½ cup dry white wine
- ¼ cup olive oil
- 2 tbsp butter
- ¼ cup fresh parsley, chopped
- 2 tbsp fresh basil, chopped
- ½ cup grated Pecorino Romano
- Red pepper flakes to taste
- Salt and black pepper
- Lemon zest from 1 lemon
Instructions

Cook pasta according to package directions until al dente. Reserve 1 cup pasta water before draining.

Heat olive oil in a large skillet over medium-high heat.

Add golden oyster mushrooms and cook until golden brown, about 4-5 minutes. Season with salt and pepper.

Add garlic and red pepper flakes, cook for 1 minute until fragrant.

Pour in white wine and let it reduce by half.

Add drained pasta to the skillet with butter and toss to combine.

Add pasta water gradually until you achieve a silky sauce consistency.

Remove from heat and stir in herbs, cheese, and lemon zest.

Serve immediately with extra cheese and black pepper.
